Recipe: Jubilee Muffins

Here is a recipe for my own Jubilee Muffins that I have made up for the Diamond Jubilee celebrations. I wanted to have the theme of red, white and blue in the actual muffins as well as on my union flag cupcake cases so I used white chocolate, cranberries and blueberries.


  • 250g plain flour
  • 3 teaspoons baking powder
  • 85g sugar
  • pinch of salt
  • 100g white chocolate chips
  • 100g dried cranberries
  • 100g fresh blueberries
  • 1 egg
  • 240ml milk
  • 90ml vegetable oil


Pre heat the oven to 190 oC. Prepare a muffin tin with cases

Mix all the dry ingredients together in a large bowl.

Combine the milk, oil and egg in a separate bowl.

Pour the liquids into the dry ingredients. Mix quickly until all the flour is combined. Do not over mix, the mixture should be lumpy.

Fill the muffin cases about 3/4 full, more if you want really big muffins.

Bake for 20 minutes, the muffins are cooked when you can press the top and it springs back again.

Set the muffins on a cooling rack to cool.

Best eaten on the day you make them, but they are still good for a couple of days. You should be able to make 12-18 muffins depending on how full you fill the cases.
