We get a weekly organic vegetable box which is great most of the time, however recently we have ended up with more beetroot than we can use. To avoid wasting any of it I made some beetroot chutney. I used Nigella Lawson’s Beetroot and Ginger Chutney recipe from her Christmas book, this recipe is also available here.
Apart from it taking a while to do all the chopping and getting beetroot splatters all over the kitchen this chutney was very easy to make.
I bought some pretty jars from Poundland as I was planning on giving some away as gifts, they look nice, but I think the jars are a little too big, there is a lot of chutney in each one!
I made a pretty tag from some scraps of card and use some bakers twine (I love this stuff!) to attach it to the jar. Now all I need to do is eat some!
